She showed us how to make delicious chocolate fig bites and chocolate covered strawberries - perfect for a last-minute Valentine's treat. Chocolate Fig Bites

Written by To Taste, Adapted from Giada’s Feel Good Food

Ingredients:

  • 14 ounces dried Mission figs, stems removed
  • 2 Tbsp almond butter
  • 2 Tbsp water
  • 1 cup (6 oz) dark chocolate chips
  • flaky sea salt

Directions:

  1. In a food processor, combine the figs, almond butter, and water. Process until smooth, scraping down the sides as needed with a rubber spatula.
  2. Using a Tbsp, scoop the fig mixture and using your hands, roll into 1 inch balls.
  3. Place on a baking sheet or cutting board lined with parchment or wax paper.
  4. Melt chocolate over low heat in a small saucepan or microwave in a microwave safe bowl using the melt setting.
  5. Using a fork, dip fig balls in melted chocolate. Let excess chocolate drip back into pan or bowl. Place dipped fig bites back on baking sheet and sprinkle with a little salt.
  6. Place in refrigerator until the chocolate is set, about 30 minutes. Store covered in the refrigerator for up to a week.
