Stir Fry Green Beans with Shitake Mushrooms and Toasted Slivered Almonds

How about a stir fry green bean dish as a nice contrast to Thanksgiving dishes like yummy stuffing and mashed potatoes? Known for its source of antioxidants, rich vitamin K, and fiber, green beans aid in bone health, digestion, and control of heart disease. In addition, green beans are low in calories and sugar, an added bonus for diabetes meal planning.
Ingredients:
- 1/3 cup of slivered almonds
- 1 tablespoon olive oil
- 1 lb. fresh green beans, trimmed and cut into 2” lengths
- 3 medium size dry shitake mushrooms
- 3 medium garlic cloves, minced
- 1 tablespoon vegan butter
Instructions:
- Soak dried mushrooms in cup of water for 10-15 minutes, or until soft and hydrated.
- Thinly slice hydrated mushrooms, squeeze excess liquid, and set aside.
- Heat 1 tablespoon olive oil in medium skillet over medium heat. Quickly toast almonds for 2-3 minutes, until lightly brown. Remove from pan and set aside.
- In same medium skillet used to toast almonds, heat 1 tablespoon of olive oil over medium-high heat. Add and stir fry prepared green beans and sliced mushrooms. Cover and cook for 5 minutes, stirring and tossing beans so that beans become tender with some light browning.
- In last minute of cooking, toss in minced garlic, toasted almonds, and pad of dairy-free butter. Green beans should remain translucent bright green and slightly tender. Serve immediately.
