Who loves luau stew? We sure do! Quick, easy, plant-based recipe that you can do in either a slow cooker or the instant pot! Taro leaves have a ton of health benefits so why not make a veggie luau stew for dinner tonight?

Taro
Set it and forget it in a crock pot or do it on fast forward in an instant pot! Either way, you’ll be getting a load of vitamin A & C, saturated fat for heart health, iron, fiber .. the list goes on! As a plus, the amino acids in taro leaves increases your natural collagen leaving skin rejuvenated and less prone to wrinkles. Can’t find luau leaves? Sub with spinach or collared greens!

Ingredients

  • Taro leaves (about 10-12)

  • 1 large onion, sliced

  • 4 carrots, sliced
  • 2 potatoes, sliced
  • 1 can coconut milk
  • Optional: any of your favorite veggies!

Directions

Slow Cooker:
  1. Add all ingredients to your slow cooker and set on low for 6 hours.
Instant Pot:
  1. Set to sauté mode and add ingredients. Place life on Instant Pot and set valve to sealing. Turn off sauté mode and cook on manual high pressure for 25 minutes.
