Chocolate Chia Pudding

Nowadays there are a ton of healthy recipes out there. Vegan curries, casseroles, quinoa dishes and a million different ways you can do a salad. But what about healthy desserts? They often get overlooked and if you have a sweet tooth, dessert can be the kryptonite to your healthy lifestyle. Here is a great option that will satisfy your craving – even the kids will be smiling!

Ingredients

  • 2 ¼ c. coconut milk
  • 4 oz. chopped chocolate nibs
  • ¼ c. unsweetened cocoa powder
  • 3 Tbsp. light agave or honey
  • ¼ c. chia seeds
  • 1 tsp. vanilla extract
  • Pinch of salt (optional)

Directions

  1. In a small pot, mix together coconut milk, chocolate, cocoa powder, agave and pinch of salt on low to medium heat.
  2. Whisk continually until the chocolate is melted and cocoa is dissolved.
  3. Transfer to bowl. Stir in chia seeds and vanilla.
  4. Let cool, stirring every 10 minutes for about 1 hour.
  5. Refrigerate, covered until chilled (overnight is best).
  6. Top with your favorite berries (our favorite is Blue Zones Project Approved grocery store and worksite Foodland’s Maika‘i berry blend) and enjoy!
