Chocolate Chia Pudding
Nowadays there are a ton of healthy recipes out there. Vegan curries, casseroles, quinoa dishes and a million different ways you can do a salad. But what about healthy desserts? They often get overlooked and if you have a sweet tooth, dessert can be the kryptonite to your healthy lifestyle. Here is a great option that will satisfy your craving – even the kids will be smiling!
Ingredients
- 2 ¼ c. coconut milk
- 4 oz. chopped chocolate nibs
- ¼ c. unsweetened cocoa powder
- 3 Tbsp. light agave or honey
- ¼ c. chia seeds
- 1 tsp. vanilla extract
- Pinch of salt (optional)
Directions
- In a small pot, mix together coconut milk, chocolate, cocoa powder, agave and pinch of salt on low to medium heat.
- Whisk continually until the chocolate is melted and cocoa is dissolved.
- Transfer to bowl. Stir in chia seeds and vanilla.
- Let cool, stirring every 10 minutes for about 1 hour.
- Refrigerate, covered until chilled (overnight is best).
