The Apatite Restaurant is starting to “take shape,” according to Rogers, with plans for a breakfast, lunch and dinner menu, and available outdoor seating when it opens this summer.
While the hotel is named for cerulean blue, the restaurant is named for a blue gemstone.
“There’s kind of a theme that we’re creating,” Rogers said. “We’re going to tie that in obviously with Blue Zones (Project).”
Running Y Ranch Resort’s Ruddy Duck Restaurant is the first restaurant in Oregon to be designated as Blue Zones Project certified.
“We want to continue that theme and that wellness initiative,” Rogers said.
