Winter Citrus Salad

Citrus fruits are just starting to explode now, power packed with immune-boosting vitamin C that helps fight off the flu and cold. Did you know they’re also a healthy source of fiber, which lowers cholesterol and regulates glucose? Their relatively low glycemic index score means they won’t trigger blood sugar spikes as much as other foods. And, the flavonoids found in citrus contribute to reduced heart disease risk.
Salad Ingredients:
- 1 pink grapefruit, sliced in rounds with seeds and pith removed
- 2 medium oranges (try navel, blood orange, or cara cara orange), pith removed, sliced in segments
- 1 large tangerine, seeded and sliced in segments
- Fresh mint leaves, for garnish
- Pomegranate arils, for garnish
- Pistachio nuts, handful
- 5-ounce arugula greens
Vinaigrette Dressing Ingredients:
- 3 tablespoons quality extra virgin olive oil
- 1 tablespoon red wine vinegar
- 3 tablespoons pomegranate juice
- ¾ teaspoon honey
- 1 teaspoon lemon juice
Instructions:
- Combine dressing ingredients and vigorously shake together in salad bottle, or whisk together olive oil, vinegar, pomegranate juice, honey, and lemon juice in small bowl.
- Arrange citrus fruits on bed of arugula. Garnish with mint leaves, arils, and pistachio nuts.
- Drizzle vinaigrette dressing over salad and immediately serve.
