Cacao Bliss Bites, Black Bean Brownies, And Kale Pesto

3 SIMPLE & DELICIOUS RECIPES BY CHEF MAYA MERRIFIELD

On February 26 at Windward Mall, Chef Maya Merrifield treated Koolaupoko residents to an afternoon of sweet and savory dishes featuring a few fruits and veggies you can find at a farmers market or local grocery store. Try these three simple plant-powered recipes that are sure to delight. Enjoy!

Cacao Bliss Bites

Cacao Bliss Bites
Ingredients
1/2 medium beet, peeled, roughly chopped
4 dates, pitted
1/4 cup oat flour (or you can grind rolled oats)
1/4 cup coconut flour
2 Tbsp cacao powder
1/2 tsp vanilla extract
pinch of salt
Optional toppings:
shredded coconut
cacao nibs
chocolate sauce

Directions
Pulse beets and dates in food processor into smaller pieces.  Add remaining ingredients and process until smooth. If the mixture is too dry, add a little water, 1 tablespoon at a time.  Roll into balls and coat with your favorite toppings such as shredded coconut, cacao nibs, or chocolate sauce. Place in refrigerator for at least 30 minutes to allow to firm. Makes about 8 balls. Recipe can easily be doubled.

Black Bean Brownies
Ingredients
1 1/2 cup black beans (if canned, drain and rinse)
3 Tbsp cacao powder
1/2 cup oats, ground into a flour (gluten-free if desired)*
1/4 tsp salt
1/2 cup maple syrup
1/4 cup coconut oil
2 tsp vanilla extract
1/2 tsp baking powder
1/2 cup dark chocolate chips (more if desired)

Directions
Pre-heat oven to 350F. Grease or line a muffin tin.** Blend everything except chocolate chunks in food processor. Fold chocolate chips into batter. Pour evenly in tin and bake for 13-18 minutes. *If you don't have a grinder for the oats, use 1/2 cup quick cooking oats. **You can make this in a baking dish as well, but note that cooking time will vary. Makes about 9 brownies.
Kale Pesto Kale Pesto
Ingredients
2 cups kale
1 bunch basil (about a large handful)
2-3 cloves garlic
1 lemon, juiced
1/4-1/2 cup olive oil
1/4 cup walnuts or sunflower seeds (or any nut/seed of choice)
3 Tbsp nutritional yeast (more or less to taste)
salt and pepper to taste
Directions
Lightly steam kale and set aside to cool. Add kale, basil, garlic, lemon juice, and olive oil to a food processor and pulse until smooth. Add remaining ingredients and pulse until desired consistency is reached. Adjust seasonings to taste. Makes about 1 cup.
