Black Bean Brownies

Black Bean Brownies

Satisfy that sweet tooth with a healthier alternative to your traditional brownie. Recipe from Chef Maya Merrifield of 'Ai Love Nalo.

Ingredients
1 1/2 cup black beans (rinse well and drain if out of a can)
3 Tbsp cacao powder
1/2 cup oat flour (or ground oats into a flour)
1/4 tsp salt
1/2 cup maple syrup
1/4 cup avocado oil
2 tsp vanilla extract
1/2 tsp baking powder
1/2 cup dark chocolate chips (more if desired)
Optional: top with dried dessicated coconut (in place of powdered sugar)

Directions
Pre-heat oven to 350 F.
Grease or line a muffin tin.*
Blend everything but chocolate chunks in food processor.
Pour evenly in tin and bake for 13-18 minutes.

* You can make this in a baking dish as well, just note that cooking times will vary.
