Almond Milk & Energy Bites

HOMEMADE ALMOND MILK & ENERGY BITES

We all know that dairy-free milk is a great alternative to incorporate into your diet but have you ever tried making nut milk at home? It's easier than you think! Grab a cup of almonds, or whichever nut you prefer (cashews also work great!), add water and start blending. The best part is that you can save the "pulp" and use it as the base for energy bites! Check out our favorite recipes below.

Ingredients

  • 1 cup raw almonds, soaked overnight in cool water
  • 4-5 cups filtered water (less to thicken, more to thin)
  • optional: 2 dates, pitted, or other sweetener of choice (omit for unsweetened)
  • optional: 1 tsp vanilla extract or 1 vanilla bean, scraped (omit for plain)

Directions

  1. Add your soaked almonds, water, and any additional add-ins (optional). Blend until creamy and smooth. Keep it running for at least 1-2 minutes so you get the most out of your almonds.
  2. Strain using a nut milk bag or my favorite trick - a thin dish towel. Simply lay a clean dish towel over a mixing bowl, pour the almond milk over the towel, carefully gather the corners, and lift up. Then squeeze until all of the liquid is extracted. Discard pulp, add some to your smoothie for extra protein & fiber, or save for adding to baked goods (see energy ball recipe).
  3. Transfer milk to a jar or covered bottle and refrigerate. Will keep for up to 4 days, though best when fresh. Shake well before drinking, as it tends to separate.

Energy Bites
A great way to use leftover almond pulp is to use it in recipes for energy bites! Not only are these energy bites easy to make, they are also the perfect pick-me-up on the go.

Ingredients

  • 1 3/4 cups leftover almond pulp
  • 3/4 cup of soft, pitted dates
  • 5-6 tsp unsweetened cacao powder 

Directions

  1. In a high-powered blender or food processor, blend 3/4 cup of soft, pitted dates until they turn into a paste. You may have to stop to scrape down the sides of the food processor a few times.
  2. Add 1 3/4 cups of leftover almond pulp, along with 5-6 teaspoons of unsweetened cacao powder. Blend until well combined.
  3. Transfer to a bowl and mix by hand for a minute until it all comes together, adding a little bit of water or coconut oil if necessary.
  4. Form the mixture into balls about 1 inch in diameter, and roll the balls in unsweetened cacao powder. Refrigerate for at least an hour before serving.
